Pumpkin Bread
From Liz' kitchen in Portland, OR

4 Eggs
1 + 1/8 cup pureed pumpkin
2/3 cup water
1 cup oil
3 1/3 cups flour
3 cups sugar
1 1/2 teaspoons salt
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon nutmeg

Preheat oven to 350 degrees.  In a large bowl, mix all "wet" ingredients (eggs through oil) until well blended.  In a separate bowl, sift together dry ingredients.  Slowly add dry mixture to wet, blending until smooth.  Pour into two greased loaf pans and bake 1 hour, until knife comes out clean.

 

 

 

Favorite Raspberry Pie
Graham Cracker Crust for 9" pie pan
1/2 lb. cream cheese
1/4 c. whipping cream
3 c fresh or frozen mashed raspberries
1 T gelatin
1/4 c boiling water
1 c whipping cream
1/8 lb. cream cheese
1/4 c powdered sugar
1/2 t vanilla
 
Beat 1/2 lb softened cream cheese and 1/4 c whipping cream, spread on bottom of pie crust, chill.  Dissolve gelatin in boiling water, add to slightly thawed berries, this should start to thicken immediately, spread over layer of cream cheese, chill.  Whip cream, cream cheese, powdered sugar and vanilla, spoon around the edge of pie.
 
 
David's Favorite Peach Cobbler
 
8 cups sliced peaches
1 1/2 t. lemon juice
2 cups flour
2 1/2 cups sugar
1 cup milk
1/3 cup margarine
2 t. baking powder
1 t. salt
2 t. cinnamon
2 T. corn starch
1 1/2 cups boiling water
 
Spread sliced peaches in a buttered 9x12 pan. Sprinkle lemon juice over fruit. Set aside.  In medium bowl, mix well 1/2 the sugar and all the margarine.  Add flour, salt, baking powder, and milk.   Batter will be stiff and thick.  Spread evenly over fruit.
 
In small bowl, combine the rest of the sugar, cinnamon and corn starch. Sprinkle over the top of the batter.  Then pour the boiling water over all...this looks terrible..but have faith!!
 
Bake at 350 degrees for 1 hour or until golden brown and glazed.  Serve with vanilla ice cream.  Enjoy!
